The Aviation Cocktail is defiantly one of the most popular and favorite of many bartenders.

The Aviation was first published in Hugo R. Ensslin 1917 Recipes for Mixed Drinks where he calls for 2/3 gin, 1/3 lemon juice, 2 dashes Maraschino, and 2 dashes crème de Violette.

Ensslin was the head bartender at New York’s Hotel Wallick and is always credited for creating the cocktail.

The Aviation cocktail appears precisely in the middle of the golden era of aviation while the aviators were the rock-stars of the world. The color remembers a clean and blue sky in the morning.
