Harveys Sherry
The Harveys story begins back in 1796 when the company was first founded by the merchant William Perry in an old house on Bristol’s historic Denmark Street as a wine-trading.
At the time sherry was imported into Britain in oak casks by ship, and then blended in Bristol.
Harveys’s vineyards are situated in the region of Jerez in southern Spain, where the local winegrowers cultivate the traditional grapes to the sherry-making process: Palomino and Pedro Ximénez.
Harveys Pedro Ximénez V.O.R.S.
Country: Jerez de la Frontera, Spain
Raw material: Pedro Ximénez
Alcohol: 16%
Harveys Pedro Ximénez V.O.R.S. is produced from the overly ripe grapes of the same name which undergo a traditional process known as “sunning” – dried in the sun – to obtain a must with an exceptionally high concentration of sugar. As a fortified wine, the fermentation is stopped by adding wine alcohol.
Aged in a system of soleras and criaderas for an absolute minimum of three years in American oak barrels gives the wine a progressive aromatic concentration and greater complexity.
Certified by the ‘Consejo Regulador de la Denominacion de Origin’ to be a wine over 30 years of age.
