The Avión story begins in the small town of Jesus Maria, Mexico.

 

The agave is hand-harvested by the jimador and slowly roasted in brick ovens for three days.

 

The distillation passes in small pot stills and then undergoes to an ultra-slow filtration. Finally, Avión uses American whiskey barrels to age the tequilas.
