Bowmore is a pioneering house and the oldest licensed distillery on Islay since 1779.

 

Bowmore still has its own Malt Barn, an airy shed where is malted the barley and start the process of germination, which is then dried with peat so it can be milled into grist.

 

Once ground in Porteus Malt Mill goes to the Mash House, where it’s added to hot water to produce a sugary liquid called wort.

 

The fermentation takes place for about two days, and then double distilled. The first distillation takes place in two Wash Stills and the second is carried out in the smaller Spirit Still.

 

Bowmore whiskey is matured for a minimum of nine years. In this case, Bowmore 12 is aged for 12 years in ex-bourbon casks.

Aroma: Subtle lemon and honey, balanced beautifully, and peaty smokiness
