The agave is harvested at its prime between 7-9 years by the Jimadores, passing for a cooking process if approximately 15 hours, fermentation process, and double-distilled.

 

In this case, Calle 23 Blanco is unaged. Calle 23 Reposado and Añejo get some rest in American Whiskey barrels for 8 and 16 months respectively.
