Cotswold Distillery was established in 2014 in the Cotswolds, designated as an Area of Outstanding Natural Beauty (AONB) in 1966.

 

Cotswold whiskey is produced with local barley that has been grown in the Cotswolds.

 

The harvested barley heads to an old technique used for hundreds of years, where the maltmen steep the barley, before turning it on the malting floors by hand for several days.

 

These go to milling and mashing. The fermentation takes place in steel washbacks and continues for just over 90 hours, and is then double-distilled in a copper pot still.

 

The whiskey is then aged for a minimum of three years in an oak cask. In this case, Cotswolds Single Malt Whisky is the first-fill ex-Bourbon barrels and reconditioned red wine casks.

 

Tasting Notes

Colour: Amber

Aroma: Notes of honey and butterscotch layered with light fruits such as peaches and apricots, a hint of marzipan.

Taste: Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelised Seville orange marmalade.
