El Buho, Spanish for “The Owl”, was founded by TJ Steele at Don Isaac Distillery which is owned and operated by the Jimenez Mendez family.

 

The family has made mezcal for five generations. The agave is harvested at its prime approximately 7-12 years of growth, the piñas are slowly roasted un an underground fire put over local ‘encino’ wood for a week, the cooked agave is mashed with Tahona millstone by the family horse, is fermented, distilled twice, and bottled.

Taste: Medium body, notes of caramel and apple
