El Silencio Mezcal is produced in small batches, using the traditional process carried on by generations of mezcaleros in Oaxaca, Mexico.

 

The Espadín agave is hand-harvested, roasted in a large fire built in an underground pit using local  Mesquite and Encino woods. Once cooked, the pinãs are milled, placed in large open fermentation vats, and double distilled using small copper pot stills, resulting in a full-bodied flavour.
