Montelobos Mezcal produced in Santiago Matatlán, Oaxaca.

 

Montelobos is made with Espadín and cooked in a conical underground stone pit oven fueled with Encino and pone wood. Once cooked, the piñas are milled with the traditional Tahona pulled by a mule. The juices extracted are wild fermented in open pinewood vats and finally, copper still distilled heated with direct firewood.
